Ashby couple's catering business aims to create new jobs after announcing expansion plans
A successful Appleby Magna-based catering business - run by an Ashby couple - is set to expand even further this year.
Saffron Catering was created 11 years ago, offering catering solutions for weddings, events and corporate occasions.
But the company expanded during the lockdown and has flourished ever since - with Ashby-based Stacey and Carla Garey as directors.
The continued growth of the business means they are looking to the future and this year they will be investing in a new unit which will house the office team and pot wash area - plus it will become the new home for the business's food tuck van HQ team.
Located on the Jubilee Business Park, Carla and Stacey Garey are now working on the planning and design work for the space which will be built over the next few months.
This is a big step for the company, as it means it will be able to expand the current kitchen area and create more food preparation space, with the removal of the pot wash area from its current location in the kitchen.
Carla said: "We are really excited to be creating opportunities for local jobs and increasing our workforce due to the expansion plans, this is what drives us!"
Due to the expansion of the kitchen area, the business will now focus on recruiting more local venues to work with, creating bespoke catering packages to target the venue's specific clientele.
In addition, the food truck HQ team continues to expand.
The next new truck hits the road in February, taking the fleet to 10 vans. The second hub located in Bingham, Nottinghamshire, is also thriving with seven vans, meaning the focus can now shift to the directors considering locations for the third hub which they are hoping to launch later this year.
