An Ashby-based catering company led by entrepreneurial couple Carla and Stacey Garey is making waves again—this time with a major expansion that is creating jobs, growing its fleet, and strengthening the town's local economy. 

With 34 branded vehicles now on the road - 18 sandwich vans, 16 fleet vehicles - and a brand-new production unit on the horizon, this is a local success story with serious momentum.

Beginning as a small-scale catering business, Saffron Catering has rapidly expanded to meet soaring demand. 

"The appetite for our food has exploded," said Carla. "We've been working hard to keep up with that demand, and the response has been incredible."

From early morning breakfasts to lunchtime favourites, the team now runs 18 sandwich van - plus 16 fully branded fleet vehicles dedicated to their main catering operations. 

That is 18 mobile kitchens and delivery vans bringing delicious food across Leicestershire every day. 

"If you see one of our vans out and about—give us a wave!" says Stacey. "We love seeing that community connection on the road."

As the business expands, the couple is now hiring up to 10 new team members for the summer. 

"We're passionate about creating opportunities right here in Ashby," says Stacey. "This isn't just about food—it's about people, jobs, and growing together with the town."

A major part of that growth is a brand-new 4,700 sq ft food production unit, now nearing completion in Appleby Magna, near Ashby.

The space will allow the team to produce on a larger scale while maintaining their signature quality and freshness. "This facility will help us serve more people while keeping everything local," Carla added.

Carla and Stacey are also committed to giving back. 

The business proudly supports The Kids Village, a local Ashby charity dedicated to building the UK's first holiday village for children with critical illnesses and their families. 

"It's a cause close to our hearts," Stacey said. "We're proud to help however we can." 

The company has displayed its connection to this charity on every one of their vehicles.
